Meatless Sloppy Joes


Ingredients:


for 4 servings

    olive oil, to taste
    ½ medium yellow onion, diced
    ½ green bell pepper, diced
    2 cloves garlic, minced
    ½ teaspoon chili powder
    ½ teaspoon cumin
    ½ teaspoon paprika
    salt, to taste
    1 cup textured vegetable protein (95 g)
    1 cup vegetable broth (240 mL)
    15 oz tomato sauce (425 g), 1 can
    1 teaspoon vegan worcestershire sauce
    1 tablespoon soy sauce
    1 teaspoon brown sugar
    2 teaspoons yellow mustard
    4 hamburger buns

Preparation:


1. Heat a sprinkle of olive oil in a medium skillet over medium heat. Add the onion and sauté for 2-3 minutes, until semi-translucent, until the oil begins to shimmer.

2. Cook for another 2-3 minutes, or until the onion is transparent, before adding the bell pepper.

3. Cook for another 2-3 minutes, until the garlic is tender and fragrant, then add the garlic, chilli powder, cumin, paprika, and salt. Season with salt and pepper.

4. Stir well to mix the textured vegetable protein, vegetable broth, and tomato sauce. Cook, covered, for 15 minutes, or until the liquid has mostly been absorbed.

5. Remove the lid and stir in the Worcestershire sauce, soy sauce, brown sugar, and yellow mustard until well combined. Cook for another 3-4 minutes, or until the leftover liquid has been absorbed.

6. On hamburger buns, serve.
